# How to Make It:
01 - Dip one rice paper wrapper into a shallow dish of warm water for 10–15 seconds until pliable, then place on a clean, damp kitchen towel or board.
02 - Beat one egg with a pinch of salt and black pepper in a small bowl until combined.
03 - Warm half a tablespoon of vegetable oil over medium heat in a nonstick skillet.
04 - Pour the beaten egg onto the center of the softened rice paper, then sprinkle half of the scallions and half of the shredded cheese evenly over the egg.
05 - Fold the sides of the rice paper over the filling to create a square or rectangular pouch fully enclosing the mixture.
06 - Transfer the pouch seam-side down into the skillet and cook for 2–3 minutes until golden and crisp; flip and cook for an additional 2 minutes.
07 - Repeat the softening, assembling, folding, and cooking steps with the second rice paper, remaining egg, scallions, and cheese.
08 - Serve the pouches hot, optionally drizzled with sriracha or sprinkled with chili flakes according to preference.
